Note on Left- and Right-Handed Tools: Choose your knife by the way you carve, in addition to whether you are right- or left-handed. If you are right-handed and generally carve with the blade towards you, choose a right-handed knife. If you are right-handed and tend to carve away from yourself, choose a left-handed knife. Reverse these guidelines if you are left handed.
